Ingredients:
- 1 lb lean ground beef
- 1/4 c chopped cilantro
- 1 packet of low sodium taco seasoning
- 1/2-1 c cotija cheese or sharp cheddar cheese
- 1/2 c diced purple onion
- 1 can enchilada sauce

Instructions:
- Place all ingredients in a large bowl, except enchilada sauce. Mix together with hands
- Pour enchilada sauce on baking dish, and make sure the bottom is covered. Take an ice cream scoop or spoon and scoop out a ball of meat, then use your hands to begin to roll balls, and place in baking dish
- Once the balls are in the baking dish, drizzle enchilada sauce over then top of them
- Cover with cheese
- Bake on 375′ for 35-40 minutes, or until meat is cook.
- I like to serve this over cilantro rice, and sauteed corn
