Meatball Enchiladas

Meatball Enchiladas | Coastal Bend Mom CollectiveIngredients:

  • 1 lb lean ground beef
  • 1/4 c chopped cilantro
  • 1 packet of low sodium taco seasoning
  • 1/2-1 c cotija cheese or sharp cheddar cheese
  • 1/2 c diced purple onion
  • 1 can enchilada sauce

Instructions:

  1. Place all ingredients in a large bowl, except enchilada sauce. Mix together with hands
  2. Pour enchilada sauce on baking dish, and make sure the bottom is covered. Take an ice cream scoop or spoon and scoop out a ball of meat, then use your hands to begin to roll balls, and place in baking dish
  3. Once the balls are in the baking dish, drizzle enchilada sauce over then top of them
  4. Cover with cheese
  5. Bake on 375′ for 35-40 minutes, or until meat is cook.
  6. I like to serve this over cilantro rice, and sauteed corn
