Super Easy (and Super Delicious!) Sopapilla Pie Recipe

Whether it’s Margarita Monday, Taco Tuesday, Hispanic Heritage month or just a plain ole Friday – Sopapilla Pie is an easy and tasty dessert to make.

Some say sopapilla cheesecake – but I was taught Sopapilla pie – so that’s what I am calling it.

The only part that makes it time consuming is waiting for some of the ingredients to soften.  Other than that – it is crazy easy.

INGREDIENTS

2-4 packages of crescent rolls 

2-3 packages of cream cheese, softened

1 ¾ cups sugar

1 tsp vanilla extract (Mexican style preferred)

½ stick of butter, softened

1 tsp cinnamon

Honey (as desired)

You can make this with any size pan — I typically use a square brownie pan (8X8) or if its for a larger crowd, I’ll use a 13X9 cake pan.  This is why the crescent rolls and the cream cheese have a varying amount.  I typically only use 2 of each when making an 8X8 pan.

Start by greasing the bottom of your pan – you can use a spray or even butter.  Then you will lay out at least one package of crescent rolls.  You will need to work carefully because you want to close all of the perforations in the dough.  I simply use my fingers. Others online suggest using a rolling pin.  It’s your choice.

FILLING: mix together 1 cup of sugar, 1 tsp of vanilla and 2 packages of softened cream cheese (if making a larger portion, use 3 packages of cream cheese). I used a spoon – but you could definitely use a hand mixer.

Spread the filling evenly all over the dough.

Now it is time for the top layer of dough.  This time it is a little more tricky because the filling isn’t easy to press the dough into.  Take another 1-2 packages of crescent rolls (depending on the size you are making)  and carefully secure the crust without perforations (make sure you cover the entire top with no filling showing).

TOPPING: mix together the remaining ¾ cup sugar, cinnamon and the softened butter.  Then spread the mixture all over the top of the top layer of dough.

Pop into a 350 degree preheated oven for 30 minutes (or until top is crispy and not gooey)

You can serve this with a honey drizzle and ENJOY!
