A salad a day…

Ugh, eating! Why do we HAVE to eat 3 times a day! I have said many times that I wish I could only eat when I’m craving a specific food and then that they turned into good calories. Talk about wishful thinking!

Anyway, I am the kind of person that NEEDS to eat, it I’m hungry I can’t focus, I get headaches and am in a bad mood! My husband will simply forget to eat. Ummm, I cannot relate to that! Sometimes I will skip meals because I get lazy and don’t want to cook for myself. My other issue is if I don’t have a plan I will end up eating carbs which are momentarily filling but don’t do anything good in the long term.

I have solved this lately by having a salad a day. Simple ingredients, fresh, healthy and perfect for the hot summer months. You can put literally ANYTHING you want in your salad but here is my go-to just in case you need some inspiration.

Ingredients for the base:

1-2 cups of mixed greens

1 -2 cooked thighs (I cook them in batches in the oven or my husband grills them for me once a week so they are ready to go when I need them)

bacon bits

1/2 avocado

2 stocks of celery chopped (I chop a bunch of celery in avance too)

To this you can add really anything you like. I add bacon bits, feta cheese, cranberries, jalapeno crunchies, etc. The possibilities are endless!

Instead of a dressing I use Olive oil, the juice of half a lemon, salt and pepper to taste. These ingredients make it extra fresh and keep it healthy!

That’s it! It’s not rocket science but having everything on hand and ready to go makes it a breeze to actually eat lunch and keep me nourished for a good portion of the day!

  1. Hello I’m looking for a summer camp or something fun for a 6 and 7 year old to do on either July 29 th or 30 th…. all day fun … while we take the older kiddos to the mall……any suggestions please…
