Two One-Bowl Chocolate Chip Cookie Recipes (Vegan!)

The leaves are turning colors, it’s starting to be crisp early in the morning…well, maybe somewhere, not here. Here, our harbingers of “Back to School” are adorable cookies on Instagram and aisles full of school supplies at HEB.

 

We are in the thick of things- school supplies, new lunchboxes and backpacks to replace old ones, teacher request lists, and a first for me this year: dorm room supplies.

 

One of my favorite back to school traditions is to bake cookies for my babies before I pick them up and hear about their days over delicious (maybe somewhat nutritious cookies).

CHocolate chip cookie recipes

I haven’t baked these particular cookies for a while so when I recently made a batch, my family gobbled them up super fast.

 

I always have the ingredients on hand to make them and my very favorite part about them is that they take ONE bowl to make and only one set of measuring spoons and one measuring cup, less mess to clean up is always better in my book!

 

You can also make this dough ahead of time and pop them in the oven for dessert on back to school night. I have included my TWO
favorite cookie recipes in this post: the first is the one I made for years (and still make because let’s face it, it’s amazing).

The second recipe came onto the scene when one my children became vegan so we make another delicious vegan one
bowl cookie recipe. **Special note- My favorite chocolate chips are Guittard Semi-Sweet (they are also vegan!) – also, if you measure your chocolate chips, we are no longer friends. I’m just kidding, we are friends, but clearly I need to have you come over to teach you to bake.

The Famous Bindingnavele One Bowl Oatmeal Chocolate Chip Cookies


Ingredients
 2 eggs (room temp)
 1 cup butter (room temp)
 1 cup sugar
 1 cup not packed brown sugar
 1 tbsp vanilla
 2 tsp baking soda
 2 tsp baking powder
 ½ tsp salt
 2 cups flour
 1 bag chocolate chips (abt 2 cups)
 2 cups oats
 ½ cup shredded coconut (optional)
 Optional 1 cup pecan/ walnut pieces

Directions

  1.  Preheat oven to 350
  2. Mix together eggs, butter, sugar, brown sugar, and vanilla 
  3. Add baking soda, baking powder, and salt. Then add 2 cups of flour.
  4. Add chocolate chips (**If you like to taste the batter, now is when you should)
  5. Add oats and optional coconut and nut pieces
  6. Bake for 12-15 mins
    o Cool for a moment on cookie sheets then move to cooling rack

Vegan One Bowl Chocolate Chip Cookies

 

Ingredients

 ⅔ cup melted coconut oil
 ⅔ cup granulated sugar
 ⅔ cup packed brown sugar
 ½ unsweetened dairy free sugar
 2 tsp vanilla
 2 ½ cup flour
 1 tsp baking soda
 1 tsp baking powder
 ½ tsp salt
 1 bag vegan chocolate chips

Directions

  1. Preheat oven to 350
  2. In a large bowl, mix the coconut oil, sugar, and brown sugar until mixed well. 
  3. Stir in milk and vanilla
  4. Stir in flour, baking soda, baking powder, and salt
  5. Stir in chocolate chips
  6. Bake 11-14 mins (edges should be light brown and tops look set)
    o Cool for a moment on cookie sheets then move to cooling rack
  7. Enjoy!
