Celebrate Blueberry Month with this Light, Tasty Blueberry Salad!

July is National Blueberry Month!!!

There’s even a blueberry council, and everything. (Don’t worry…I didn’t know, either.)

I am a big fan of the blueberry. Packed full of antioxidants, sweet but not too sweet, only approximately 85 calories per cup. I add some every morning to my breakfast smoothie. I love them in cobbler, in muffins, in pancakes, as a sauce, as a syrup, in a salad… Basically, if it has blueberries, I’ll eat it.

There are so many blueberry recipes out there, it can be hard to decide which ones to try. Since we eat a combination of gluten-free and dairy-free over here, it can be hard to find a blueberry recipe that isn’t made from scratch but is something everyone can enjoy. Gluten-free flour is wonderful, but sometimes I need something I can just throw together.

I gravitate toward simple, changeable recipes. Something that can be used as a guideline, but that I can modify depending on what I happen to have on hand and what ingredients my family prefers.

I located a wonderful, basic, blueberry salad recipe on allrecipies.com. It was simple; a great starter recipe. (I have to admit. It wasn’t until I had been an adult for several years that I attempted to eat a green salad that contained fruit. I just could’t see how that flavor combination would be any good. One bite, and I was hooked.) I then, as I usually do, altered it. My tasty version of this recipe is below.

Blueberry Salad Recipe- Corpus Christi Moms Blog

Ingredients:

1 package favorite salad greens (I like the organic power greens at HEB)

1/2 pint fresh blueberries

1/2 pint fresh strawberries

1 cup grapes, halved

1 red apple, thinly sliced

1/4 cup toasted walnuts

1 grilled chicken breast, sliced

Raspberry vinaigrette salad dressing

Directions:
Starting with the salad greens, place all ingredients except for the salad dressing in a large bowl. Toss and serve with the salad dressing.

What’s great about this recipe is that it is totally adaptable for blueberry lovers with different tastes and dietary concerns. Love cheese and aren’t intolerant? Add some feta. Hate nuts or are allergic? Leave out the walnuts. Vegetarian or vegan? Scratch the chicken. This recipe is endlessly changeable and customizable.

So, go pick up some greens and fresh blueberries, add in my ingredients or select your own, and celebrate National Blueberry Month with a yummy, easy salad.
