Are you a Saturday-morning or an early-morning-before-school Paula Dean that makes a home-made fresh breakfast every day, or would you rather pour a bowl of cereal and call it done?
I’ll be honest when I became a SAHM I really thought I was going to get up like a Disney princess on the weekends with birds chirping, singing songs and making my family these big healthy and fun breakfasts. But let’s face it most days I wake up looking and feeling like something from The Walking Dead.
This morning, however, I woke up fairly rested and with plenty of time before we needed to get ready for soccer, so I decided instead of popping some Mickey waffles in the toaster, I would make pancakes for us AND give the kids a little treat by using some of their Halloween candy to make them extra sweet. It turned out so good and yummy I wanted to share with everyone!
INGREDIENTS:
- 2 cups HCF All Purpose Baking Mix
- 1 1/3 cup milk (I use almond milk because that is the only milk we keep in the house)
- 1 egg
- 2 TBSP Stevia (or sugar, we just happen to be out of sugar and have a giant bag of baking Stevia)
- Halloween Candy of your choice
I used all the plain M&M’s I could find in their buckets, but you could totally use Reese’s cups or Reese’s pieces. This is the fun part where you get to cater to your taste and imagination! I could also see using 1 mini Hershey bar in the middle of each pancake. Okay, okay…now I am distracted by candy. Oops!
DIRECTIONS:
Mix the pancake ingredients in a bowl until they are all combined and most of the lumps are gone. I used my kitchen aid mixer because it is the best and I do not like getting hand cramps mixing batter!
Once that is done, dump the candy into the and batter fold in. I probably should have just used a spatula and folded my M&M’s in but I didn’t want to do more dishes, so I just used the mixer on the slowest speed for a few seconds. Just being honest!
Once the batter was ready, I used my ¼ measuring cup to pour the batter onto my counter top griddle. True story: my husband bought this thing a few years back and I was so annoyed that he bought something that I could totally do with a pan on my stove, but then I used it and it makes pancake making so much easier! So, please don’t tell my husband but this was one of his better purchases. 😉 I set the griddle to 375 degrees, I find that is the perfect temperature to make sure you aren’t burning anything, but it doesn’t take all morning to cook 10 pancakes.
