Pumpkin Spice Latte, pumpkin muffins, pumpkin candles…if you are “basic” like me – then you are guilty of loving all things PUMPKIN – and these easy pumpkin pancakes are no exception!
And that love doesn’t stop at breakfast. On today’s edition of Tasty Tuesday – we are flippin’ some Easy Pumpkin Pancakes!
INGREDIENTS
DRY Ingredients
1 ½ cup pancake mix (I used Bisquick)
1 tsp ground cinnamon
½ tsp ground nutmeg
¼ tsp ground cloves
¼ cup sugar (optional)
WET Ingredients
1 cup milk
½ water
½ cup canned pumpkin
Start with combining the dry ingredients. The original recipe called for ½ tsp of ginger. But I like the taste of cloves — so I changed it. Also — the original recipe had NO sugar — but I can tell you, it is needed. However, if you do not like sweet pancakes — you, of course, have the option to lower the sugar or completely delete it.
In a separate bowl, mix together the wet ingredients.
I made a “well” in the dry ingredients before adding in the wet ingredients. You can hand mix the ingredients – but I found it to be kinda lumpy – so I used an electric mixer.
Make the pancakes as you normally would — this recipe makes thin pancakes (almost like a cross between a pancake and a crepe). I used medium heat, a non stick skillet and I used better before each pour.
These holiday pancakes have a subtle pumpkin taste and are definitely not strong (which I love). This was such a hit with the teenagers and even the hubby (who is not a big lover of sweets).
