Baking is something that goes along with the holidays!
Between family dinners, treats for school parties and the most important, cookies for Santa, you can end up baking more than usual! I love cooking, but I have not dabbled in baking too much. For the last couple of years, I have tried to be in the kitchen more, and make more things from scratch.
A few years ago I found a recipe for some soft gingerbread cookies. I have adapted this recipe over the years and it is one of my favorites to make. Also, it is pretty easy so it is the perfect cookie to make for Santa, especially if you are like me and wait until the last minute to bake!
Ingredients Needed to Bake:
2 1/4 Cups Flour
1 1/2 teaspoons ground ginger
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
6 tablespoons butter or margarine (softened)
1 1/2 cup granulated sugar
1 egg
1 tablespoon water
1/4 cup molasses
How to Bake your Cookies:
Preheat oven to 350 degrees
Combine dry ingredients {except the sugar} in a medium bowl
In a separate bowl, cream butter and 1 cup of sugar, once the butter and sugar are well combined, add the rest of the wet ingredients {egg, water, and molasses} and mix until well combined.
Slowly mix the dry ingredients into the wet – you will end up with a thick, sticky dough.
In a small bowl add 1/2 cup of sugar
Scoop a rounded teaspoon of dough and roll it into a ball, then drop the rolled dough ball into the sugar. Roll around until it is coated with sugar, then drop onto a cookie sheet. {I personally put a sheet of foil on my cookie sheet and spray it with a little cooking spray first.}
Bake for 8-10 minutes {This all depends on your oven, I leave my cookies in for the full 10 mins until they have spread and are a little cracked on the top}
Remove from oven, let cool for a minute, then transfer to a wire cooling rack to finish cooling, and ENJOY!
