Dinner in a Flash: 3 Simple Recipes

You must be in a hurry (and famished) if you’re reading this. And if you’re anything like me, you get hangry quickly. These simple (and yummy!) recipes will get grub on the table for your fam in 30 minutes or less. 

 

Dress up boxed macaroni and cheese with extra cheese, protein and veggies. Serves 4

Ingredients:

+1 Box Macaroni & Cheese – brand of your choice  {I like Annie’s Organic Gluten Free}

+2 Cups Cooked chicken, chopped {Keep it simple: you can use store-bought rotisserie chicken, leftovers, or canned.}

+1-2 Cups Shredded Cheese {This is all what your family will prefer – I’ve used cheddar, mozzarella, Monterrey Jack, whatever I have on hand}

+1 bag Steamable Broccoli Florets {Iprefer Bird’s Eye brand, but you can use whatever you like.}

Instructions:

Cook macaroni noodles according to package directions in a large pot. While the macaroni is cooking, get the broccoli steaming in the microwave. Once cooked, chop the broccoli into smaller bits.

After the macaroni has cooked, drain. Make cheese sauce with the powder packet from the box. Add macaroni, chicken and broccoli to cheese sauce. Stir well. Add salt & pepper to your taste.Begin adding shredded cheese a 1/2 cup at a time, stirring well each time. Give it another taste and adjust accordingly for seasoning and overall cheesiness.

Divide into 4 bowls and serve!

Pro tip – Canned pineapple is my go to dessert. I like the pineapple chunks in juice. Always in season, always sweet and always delicious!

Breakfast for dinner made even better

with a few simple additions.

Ingredients:

+Eggs {I use 2 per adult, 1 per child} 

+Butter or olive oil

+Bread of your choice 

+Mix-ins: Bacon bits, fresh spinach, cheese of your choice like cheddar or feta, dill, salt, pepper (optional)

Egg Sides: Refried beans, mashed avocado (optional)

Toast Toppers: Jam, jelly, mashed avocado (optional)

Instructions:

Heat nonstick pan over medium low heat. Add 1/2 tablespoon of butter or olive oil. While that is heating, break eggs into a bowl and beat with fork until mixed. Add eggs to your pan. Season with salt and pepper. Gently stir the eggs with spatula, moving eggs from outside to middle of pan and folding over, for about 5 minutes. When the eggs are halfway done, add in optional mix-ins like bacon bits, spinach, cheese, etc. Once the eggs are done to your liking, remove from pan and divide between 4 plates.

At this point, you can add Egg Sides, like a scoop of refried beans or mashed avocado. Plate next to the eggs. Finally, toast the bread of your choice and and top with Toast Toppers like butter, jam, jelly, mashed avocado, etc.
